Corn fritters


Let me start off by wishing you a Happy New Year. I am kicking off the new year by making delicious little corn fritters that goes well with some sweet chilli sauce. These little morsels need a bit of rest time before being fried. Have some frozen corn on standby and you could frying up some fritters in half an hour!





Corn Fritters
1 cup corn
2 tb coconut milk
1/4 cup finely chopped red pepper
1 jalapeno - minced
1 scallion - finely chopped
1/2 tsp salt
1 egg - lightly beaten
1 1/2 tsp cornflour
1/3 cup all purpose flour
vegetable oil for frying


Add all ingredients ( except vegetable flour) in a food processor and pulse until mixture look finely minced. Let mixture rest for 30 minutes. The batter should be able to hold its shape ( but not a stiff dough), if it is too thin, add a tablespoon or more of all purpose flour.

Heat oil in a pan on medium heat. Drop tablespoons of batter into oil and fry both sides until golden brown. Serve hot with sweet chilli sauce. Makes a dozen and a half fritters.

I like the use of coconut milk in these to add a different aspect to the flavour! :)
